  • The Rymill Coonawarra philosophy is to make wines of finesse, power and balance from their own estate grown fruit. They are proudly 100% Sustainable, 100% Coonawarra and 100% Estate grown.

    Cabernet Sauvignon is Coonawarra's pre-eminent grape variety. Parcels of premium fruit are selected, fermented and then aged in French oak barriques to produce this full-bodied and richly flavoured wine.

  • WINEMAKER'S NOTES

    Winemaker, Sandrine Gimon comments, "2012 was considered an excellent vintage across Coonawarra. On our estate, the lower yields and very good diurnal temperature variations were key to the trade mark cool climate ripening season. The berries were small but with a great concentration of colour and tannins – perfect combination for Coonawarra Cabernet Sauvignon. The final cellared wine is still offering great vibrancy and freshness on initial tasting, but is also now showing a tantalising array of savoury and spicy notes. Rich and elegant, outstanding for drinking now, it has the potential to continue to evolve nicely for several years.”

    TASTING NOTES

    The bouquet displays beautiful aromas of mulberry, dried plums and hints of rich dark chocolate and cedar box. This rich and sophisticated wine has juicy flavours along with hints of choc-mint. The flavours have an elegant and savoury edge making this cabernet sauvignon incredibly smooth.

    'Medium to deep red colour with a slight hint of purple. The bouquet is starting to show some cedary development, the beginnings of cigarbox, and it's tight and firm and elegantly framed on the palate. Red fruits and a hint of mint. It's starting to drink well and has many good years still ahead of it. Lovely cabernet.'

    'Coonawarra nights can be bitterly cold. This will warm your insides with ease. Rymill's Maturation Release at five years. Quality Coonawarra Cabernet. Get knee deep in black and dark fruit goodness. Slowly lower yourself in wade through the pleasures of generosity, balanced oak plus a moreish finish. Time has clearly softened this but there's still a vitality to the fruit. It's dense but measured. All the expected Cabernet traits are here. Savoury characters have gained some momentum now the fruit has softened. Finish is fine and long.'

    ''12 has always been considered a very good vintage for Coonawarra. Beginning to show signs of development but really still quite fresh. Cedary and toasty on the bouquet, with 'small red berries' providing the main fruit character and a dash of that terra rossa limestone influence. Drinking quite well now, but the flavours are still in transition, and the tannin is a bit edgy. Needs time.'
