2015 De Bortoli The Estate Dixons Creek Shiraz

Hand-picked, wild yeast open-fermented, matured in new and used French oak. Archetypal cool climate, medium-bodied, shiraz. Its core of red and black cherry fruit has flecks of pepper, licorice and spice, the tannins smooth and supple, the oak totally integrated. Lovely style.

DESCRIPTION
  • Selected from vineyard parcels grown on the Estate Vineyard at Dixons Creek. Vineyards planted from 1971 to 1994.

2015 will be known as one of those vintages that made people sit up and notice, Yarra Valley Shiraz is really a force to be reckoned with.

  • WINEMAKER'S NOTES

Perhaps the best overall season of the last 10 years. Dry, timely rainfall, mid season ripening, terrific.

Shiraz is one of the most compelling and grown up wines that the Yarra Valley produce. Most informed wine visitors taste the Syrah style and comment on their ethereal European style. Fruit driven, spice, graphite, gentle and textural.

A combination of whole bunch and whole berry is tipped into open fermenters. Some foot plunging at the beginning is followed by judicious extraction by turnover and plunging. 20 days of maceration and fermentation with indigenous yeast. Pressed, settled overnight and filled to barrel with gravity. Matured for 12 months in used 500L and 2300L casks.

    Alc/Vol: 13.%, pH: 3.59, TA: 6.2g/L

    TASTING NOTES

Medium with purple edge. Bright, aromatic, graphite, violets, generosity, wild herb, white pepper, autumnal, silky flavours.

'Yarra Valley shiraz grown on mature, estate vineyards, fermented wild with some whole bunches, then matured in (used) 500l oak. I suspect this is the tweaked name for the Estate Grown range.
It’s an even, well-balanced wine with good volume of sweet, ripe, berried fruit and plenty going on in and around it. Immaculate is the word I’m looking for. A berry cup of assorted summer and forest berries, twig and pepper characters, licorice, a slippery/velvety aspect to the texture, florals. Pure, polished flavour is the dominant them, the savoury extras folded neatly within. Cracking.'
