  • The Sabre is a fencing weapon with a flat blade, used with cutting or thrusting actions; a military sword popular in the 18th to 20th centuries, mainly used by cavalry. The grapes for The Sabre are from some of the oldest and best sited Pinot Noir vineyards in the high cool comate Lenswood and Piccadilly sub-regions of the  Adelaide Hills. Representing the 'pointy-end' of Tim Knappstein's three different Pinot options, this 2015 is perfectly weighted, fragrant and licked by a beautiful sweet vanillan oak.

  • WINEMAKER'S NOTES

    The grapes for The Sabre are from some of the oldest and best sited Pinot Noir vineyards in the high cool comate Lenswood and Piccadilly sub-regions of the Adelaide Hills. We work with our growers to produce moderate yields of fruit, well  exposed to sunlight to maximise colour and ripe flavours. Vintage commenced 18 days earlier than 2014 and showed a return from the lighter crops of 2014 to average yields. As usual growers were requested to leaf pluck the morning (eastern side) of the Pinot vines soon after fruit set to give the optimum fruit exposure and aid the development of colour, tannins and ripe flavours. Picking dates 25th February to 25th March. Again the newer clones (777, 114 and 115) ripened first, reinforcing our belief that they are best suited to the coolest sites.

    Made in small batches, all cold soaked and hand plunged in open fermenters. 100% malolactic fermentation aged in French oak barriques (25% new) for ten months prior to blending. Bottled in March 2013 after minimal filtration.

    'This release is noticeably reductive and spice driven, especially aromatically, though importantly there’s also a core of sweet, silken fruit. It doesn’t have much colour and there’s no heaviness to the palate whatsoever; it flits and weaves as it dances along the tongue. Not a great deal of tannin, but a decent sense of shape. This isn’t the most cohesive of reviews but I think you get the picture. Heaps of spice, some rubbery notes, light on its feet but not weak or wanting. It works. Well.'
