The Rymill Coonawarra philosophy is to make wines of finesse, power and balance from their own estate grown fruit. They are proudly 100% Sustainable, 100% Coonawarra and 100% Estate grown. The best French barriques were selected for this wine from the outstanding 2015 vintage in tribute to John Riddoch Rymill, an extraordinary man who led the expedition which discovered the Antarctic Peninsula.
The nose has complex layers of alluring dark mint, five-spice, and blackcurrants. As promised by its appearance, the wine is intense yet bright and generous in its complexity of flavours, with plums, star anise and fennel seed. The voluptuous middle palate, abundant in dark ripe fruit and elegantly structured by the oak and youthful tannins, offers to linger in a long, convincing after taste. Enjoy this wine on its own, or with food, but please slow down and take your time to meet and savour this intense Coonawarra Cabernet Sauvignon.
The Rymill Coonawarra philosophy is to make wines of finesse, power and balance from only their own estate grown fruit. They are proudly 100% Sustainable, 100% Coonawarra and 100% estate grown. Their philosophy extends beyond the wine as we know truly great flavour embodies the care taken in the vineyards to produce healthy vines and protect the environment around them. With this in mind they are committed to sustainable practices that meet the needs of the present without compromising the future. Building on the Rymill family’s history of pioneering within the Coonawarra region, their modern winemaking team has taken up the challenge to handcraft the very best expression of what the unique terra rossa soil and cool climate of Coonawarra can deliver.
CAMPBELL MATTINSON - HALLIDAY'S WINE COMPANION
Best barrels of cabernet from the estate 35yo vines. 100% new French oak. It's remarkably elegant despite its heft. Blackberry, boysenberry and blackcurrant all combine with tobacco, mint and creamy/smoky oak to create a gorgeous expression of the variety. The only 'problem' with this wine is that the estate's 'standard' release is its equal.
JOE CZERWINSKI - WINE ADVOCATE
Rymill's flagship 2015 The Surveyor Cabernet Sauvignon is quite discrete and elegant despite its ample weight and massive richness. Cedar and earth notes add gravitas to the ripe cassis shadings in this full-bodied, velvety wine, which finishes long, supple and warm.
