  • WINEMAKER'S NOTES

    Handpicked and de-stemmed to small open-top fermenters, we let the ferments go wild. Hand-plunging often and vigourously we press ferments off skins when the tannins are melting in your mouth, about 5 weeks after ferment starts. Maturation was in a mix of old and new (36%) French oak barriques for 15 months.

    TASTING NOTE
    The 2015 Cannonball Cabernet Sauvignon + Merlot + Petit Verdot is full of Cabernet aromatics: blackcurrant, chocolate, blackberry, leaf compost and earth. The oak adds a creamy note with some spice and toast. Bright and succulent, the palate is sweet fruited but taut. The tannin structure is firm, indicative of the PV content yet long and fine grained.

    'This is good stuff. Flush with fruit, smooth of texture, the finish a long dance of flavour. Bay leaves and blackcurrant, chocolate and mint, tobacco and boysenberry. Everything here feels team-oriented; it gets the job done in excellent style. One sip and you think: I really should drink more Margaret River cabernet. It’s that kind of wine; the persuasive kind.'
