DESCRIPTION
  • The name Coulthard is in recognition of the Willson family ancestors who arrived in South Australia from England aboard the HMS Buffalo in 1836.

Cabernet has a very long history in Langhorne Creek and is one of the original red varietals that established the region. This fruit was grown on ancient alluvial flood plain soil, traditional to this area and as a result of an individual parcel selection, has allowed us to show the pure varietal expression of Langhorne Creek Cabernet.

  • WINEMAKER'S NOTES

Individual Cabernet parcels were fermented separately in small open fermenters to allow excellent extraction of colour and flavour. Each batch was matured in a combination of new and older French and American oak barriques for 18 months.

    TASTING NOTES

It displays a classic ripe cassis aroma with supportive savoury notes. A well balanced palate showing ripe dark fruits enhanced by a silky textural finish.

  • REVIEWS

'I rather like Cabernet's nuanced expression along the Fleurieu. Despite the intense heat at times, the maritime influence seems to tame the billows of dark fruit flavours, edging them persuasively away from jammy flavours while delivering stern, stiff-upper lipped tannins; graphite mineral bite; saline acidity and plenty of comeuppance when quality oak, as with here, is used.'
