  • THE FINER DETAILS
  • This wine has been crafted utilising fruit sourced from three separate blocks on the Yallingup Hills estate: Blocks 3 and 4, two premium blocks of 25-year-old Cabernet Sauvignon vines and Block 5 Merlot; the latter block being planted in 1987. A small amount of Cabernet and Malbec from the neighbouring property of Abbey Vale, also in the heart of the Yallingup sub-region, features in the 2016 blend. All of the constituent vineyard parcels were fermented separately, using a variety of techniques. The individual parcels were matured for 12 months in 30% new and 70% seasoned French oak barriques. From these parcels we have strived to blend a wine that has great depth and intensity of fruit and speaks strongly of the premium Cabernet program at Deep Woods Estate.

    WHAT SHOULD YOU EXPECT?

"This is one of the best wines that Deep Woods Estate makes and the one that I cellar for special occasions - and also drink it on a Tuesday with pizza." Julian Langworthy, Chief Winemaker

  • WHO MADE IT?
  • Deep Woods Estate was founded in the northern end of the beautiful Margaret River region of W.A in 1987. It changed hands in 1992 when the Gould family purchased the winery, and was sold again in 2005. Today, it is part of the Fogarty Wine Group (they also own Lakes Folly, Millbrook and Smithbrook wines). The property nests on a ridge overlooking a sea of Jarrah and Marri trees, hence the name Deep Woods. It boasts 16 hectares of sustainably-managed, low-yielding vineyards segregated into 12 blocks planted to Semillon, Sauvignon Blanc, Verdelho, Chardonnay, Merlot, Shiraz, Cabernet Sauvignon and Cabernet Franc. Winemaker Julian Langworthy employs traditional and state-of-the-art techniques to craft small batches of wines of impeccable quality under several different labels. The Deep Woods Reserve label is the ultra-premium range made entirely from estate-grown fruit. The Estate range brings beautiful varietal character and vibrancy while offering excellent value for money, whilst the Ebony, Ivory and Harmony label uses estate and locally sourced fruit. Stylistically they range from complex, zesty, nutty Chardonnays through to cassis and chocolate Cabernet Sauvignons displaying Margaret River typicity.

DAVID BICKNELL - HALLIDAY'S WINE COMPANION

Bright purple-red, lifted, ripe black and red fruit, a hint of leaf plus assertive cedary-spice from French barriques. The acidity is just right and working with the fine-grained tannins to produce a long savoury finish. Ticking all the boxes. Quality young Margaret River cabernet with a long future.

Made with a silky deft touch to deliver an exquisite comb of firm cabernet and plump merlot. Scented violets and blackcurrant with an edge of graphite. The rich concentration of dark fruit and chocolate on the palate delivers a powerful statement. The structure is impeccable, with grainy, slightly sinewy tannins supporting the focused and effortlessly controlled fruit.

JAMES HALLIDAY - HALLIDAY'S WINE COMPANION

Parcels of cabernet sauvignon and merlot were separately vinified and matured in new and used French oak, which is still to knit fully with the fruit. The fruit is of such quality that it will prevail given time.
