  • Thierry Pillot's red wines have come of age in recent years, to the point where they are no longer understudies to the Domaine's white crop. This juicy, crunchy and perfumed Pinot is a fine example of this reality. For structure and perfume, Pillot employed 25% whole bunches this year and the result is something pretty special. You're going to taste some outrageously delicious Bourgogne-level wines from 2016. Few, I imagine, will offer much more energy and charm than this example.

Thierry Pillot is starting to hit his groove, driving the wines of his family Domaine to greater and greater heights. With each vintage the wines here get purer, more refined and, well, just better. Thierry is great friends with Vincent Dancer, Marc Bachelet, Arnaud Mortet and many of the other young guns of Burgundy. He is part of a revolution that has been sweeping through the Côte d’Or: a zeitgeist being driven by a new generation.

This is drawn from two estate owned sites on the southern reaches of Chassagne, nearby Chagny and Remigny. The soils here are the classic clay and limestone of the Côte and the vine age is 35 years on average. The grapes are handpicked and mostly destemmed before being naturally fermented and aged for 12 months on lees in a mix of steel vats and used large barrels.
