100% Chenin Blanc. Clay-limestone soils. Cold settled in tank, before fermentation in Stainless steel vats. Once in bottle, the wine spends a minimum of 36 months on lees, before disgorgement.
Brilliant pale straw colour with a faint tinge of green still remaining on the edges and watery hue. The nose displays lifted scents of apple, ripe pear, citrus, quince and spice. On the palate fresh, ripe apple and citrus flavours are followed by some more subtle quince and spice. Clean dry finish with excellent natural acidity. Aftertaste of apple, citrus and quince.
