  • The Graillot Project is an impressive collaboration between Australian wine importer Robert Walters and iconic Northern Rhone Valley winemaker Alain Graillot. After importing Graillot's own wines for many years, Robert decided to utilise the Frenchman's extensive knowledge to take full advantage of a 3.3 hectare plot, situated in the Mount Camel Ranges - a sub-region of Heathcote. Joining the project in 2014 was gun winemaker Luke Lambert, who is now overseeing the Graillot Australian wines. With such a superb team, the quality of the wines is consistently exceptional.


    Handpicked, a combination of whole bunch and destemmed fruit was transferred to open top fermenters of various sizes. It was then pressed off to large format, older wood for ageing for 13 months. No new oak was used in the élevage. 2016's Syrah No. 2 contains approximately 50% whole bunch component, to utilise the finesse, structure and perfume that whole bunches can bring. Another exciting development is the inclusion of some parcels of Syrah that were fermented in a pure carbonic maceration style. No sulphur was added pre-ferment, no temperature control, and the wines were bottled without fining or filtration.


    There was no 'No. 1' made in 2016 so all of the parcels ended up in this wine. The resulting Syrah No. 2 is already highly perfumed with sappy, pungent notes of lavender, pine forest and an intriguing hint of sandalwood. The palate is fleshy and expansive with a core of sweet dark cherry and ripe plum fruit complexed with hints of meat juice, liquorice, and Szechuan spice.

It’s a complete wine. It plays a Siren song for the Heathcote region as a whole. It has texture, graphite, nut and herb notes oozing from its pores. Blue and black berried fruits. Just simply beautiful.'
