'The 2016 Under & Over Heathcote Shiraz presents an elegant palate of blackberry fruits and fine-grained slatey, skeletal tannins adding wonderful grip and length.
My Wine Guy
The Heathcote wine region in rural Victoria is known for its red Cambrian soil, which together with the warm climate combine to produce Shiraz fruit of wonderful concentration and supple, savoury tannins.
Fruit was harvested in the cool of the morning to maximise fruit freshness. Upon reception at the winery the fruit was carefully de-stemmed into a combination of open top & rotary fermenters where they underwent a 4 day cold maceration prior to fermentation followed by a warm fermentation for a total time on skins of 14 days. All parcels were pressed off at dryness then matured in large format barrels for 12 months prior to blending for bottling. The new oak percentage was quite low at just 12%, enough to give some structure and to play a support role to the aromatics.
Colour: Youthful red-purple with crimson hues.
Aroma: Dark cherry & earthy black fruits with subtle biscuity oak.
Palate: Pure focused palate with elegant blackberry fruits and fine-grained slatey skeletal tannins adding grip and length.
