  • THE BRIEF
  • Located in Carcès, in the Provencal region of Var, Domaine du Grand Saint Paul farm 25 hectares using organic practices. All of their wines are vinified on the estate.

The 2017 Rose is elegant and light, with watermelon, red berry notes, and a generous palate that finishes wonderfully dry on a wave of acidity. Light, dry and delicious.

  • THE FINER DETAILS
  • Cinsault, Carignan, Syrah, Cabernet Sauvignon from Provence.
All grapes are harvested before sunrise, to ensure a cool and stable temperature before pressing. They are destemmed, and macerated for 2 to 4 hours, to extract a light blush colour.

Once pressed, the must is fermented in temperature controlled stainless steel, at 16 - 18 deg. C for approximately 10 days. It is then racked off its gross lees, and put back into tank for a short maturation before bottling.

    WHAT SHOULD YOU EXPECT?

Organic wine with citrus notes, subtle melon character, and red fruits. A fine and elegant salmon-pink hue with a full palate marked by a persistent freshness, finishing crisp and dry.

  • WHO MADE IT?
  • The Domaine is located near Carcès, in the Provencal region of Var, situated between Brignoles and Draguignan. The owner David Brun operates 25 hectares of vines with organic farming practices, taking care of all aspects of viticulture before vinification. The wines of the estate are made from typical grape varieties of Provence (Cinsault, Rolle etc) on four different soils, arranged on the commune of Carcès and Cotignac.
