  • THE BRIEF
  • Jo Perry is one of the most exciting winemakers in the country right now. Producing wines from the Margaret River area, Jo is decidedly "hands off" in the winery, allowing the natural quality of the fruit and vintage to shine through. In fact, the name Dormilona means 'lazy bones' in Spanish, and speaks to Jo's philosophy of minimal intervention in the winery. The resulting wines are fresh, dynamic, and just about as pure as you can get! It's not surprising that Jo was awarded the Young Gun of Wine in 2016.

The Clayface range are wines that were fermented in clay amphorae, hand stomped and plunged, basket pressed, and then back into clay for maturation. No oak whatsoever. The wines are vibrant and energetic, and very, very rare - Jo only produces a few hundred bottles each vintage.

On his recent trip to Australia, James Suckling sampled some of the newly released 2018 Clayface Cabernet, prompting him to score it 96 Points, and pose the question - "Is this the world's greatest natural wine?"

  • THE FINER DETAILS
  • Dry grown from our single vineyard organic plot in Yallingup. Hand harvest, foot & hand stomped into the terracotta pots. Hand plunged daily during wild fermentation then left on skins for six months with native malo. Basket pressed on a cold wintery day back to the amphora for maturation for three months. Hand bottled direct from the pots, sealed under cork with a wax top. No fining, no adds, no filtration, no pumping, no gas, only good old candle power & knuckle grease. Plus very minimal sulphur at the bottling process - this is to ensure no bottle variation & to eliminate any oxygen pick up.

    WHAT SHOULD YOU EXPECT?

Elegant and fragrant, this wine is all about vibrancy and fruit purity. Blackcurrant and herbal notes, bay leaf, violet florals and red-fruited freshness. It's layered and complex with a lovely mineral note running through, and oh-so-pure. Delightful drinking.

    JAMES SUCKLING

A beautifully pure and super fragrant iteration of cabernet that has abundant violet flowers and fresh leaves with light cedar and gentle spices, too. The palate has a very elegant, sleek and defined feel with immaculate freshness and depth. Silky tannins and a long and flavorful, red-cherry and redcurrant finish. Drink or hold.
