Located in Imerovigli, the sub-region of Oia Santorini, Sigalas’s Assyrtiko basket trained vines (Kouloura) average 60 years of age, and are planted in black lava, volcanic ash and pumice soils.
Fermentation takes place in stainless steel tanks under controlled temperature. The wine comprises of 50% free run juice. 80% whole bunches are gently pressed and spend 5 months on lees.
Pale yellow colour, elegant nose with an aromatic composition of lemon, orange and yellow fruits and herbal and mineral hints. The palate shows excellent balance, lively acidity and a very aromatic, lingering aftertaste.
On the magnificent island of Santorini, lies the ancient plain of Oia, where Domaine Sigalas can be found. Here, one of the most vibrant varieties of the Mediterranean, Assyrtiko grows alongside Athiri and other varieties including Aidani, Mandilaria and Mavrotragano. The estate was founded in 1991, located in the traditional canava (wine cellar) of the Sigalas family. In 1998, a new, modern winery was constructed nearby in a privately owned area. 2003 was a further milestone when it was renamed Domaine Sigalas. Today Domaine Sigalas continues to implement its plans for development and growth, based on the three principles on which it was founded: a creative relationship with the traditions of the island of Santorini, quality and remaining technically savvy.

The 2018 Santorini Assyrtiko, the flagship 100% Assyrtiko is unoaked and comes in at 14% alcohol. This is textured and elegant, while still solid in the mid-palate. If a couple of the 7 Villages offerings are powerhouses, this leans a little more to balance—but it still has very ripe fruit and its fair share of power. It's a bit young and less evolved than the 2017s, of course, but that will come. The rest combines balance and concentration. The fruit still has flavor, the finish is fine and it gets longer as this airs out and evolves. This isn't as striking as many of the 7 Villages wines, but it is still very fine. You may like it as much or better for its combination of fruit, grace and harmony.
