  • Yabby Lake Vineyard was established by the Kirby family in 1998, in Tuerong, which is located in the northern end of the Mornington Peninsula, Victoria. Over the past decade, the vineyard has built a reputation for chardonnay and pinot noir of great purity and character under its Single Vineyard and Single Block Release labels.Led by winemaker Tom Carson, the Yabby Lake philosophy is to craft wines that speak of our site and the season in which they were grown. It's the attention and care in the vineyard that is most critical to allowing this expression.

    Yabby Lake's Single Vineyard range specialises in crafting wines of great purity and character, reflective of the site and season on which it was grown. The Single Vineyard Pinot Noir typifies this philosophy and has impressed wine critics both nationally and internationally.

  • THE FINER DETAILS
  • The fruit was handpicked, with each parcel handled separately in the winery. Hand sorted and carefully destemmed (25% whole bunches). Each parcel went into traditional oak open fermenters. The fermentation was hand plunged up to three times per day, the temperature of the fermentation peaked at 32ºC and the wine stayed on skins for 13 – 15 days, after which the wine was pressed into tight grain French oak puncheons (500L) for malolactic fermentation and maturation (11 months in oak. 20% new). The wine was bottled in early February 2019. No fining, light filtration.

    WHAT SHOULD YOU EXPECT?


    Deep crimson, the 2018 pinot noir has a perfumed and floral aroma. The palate is finely structured and concentrated with a host of tightly packed red berry fruits. Polished and poised, the glossy sheen of subtle French oak is beautifully integrated in the background. Super silky tannins, and with incredible length. Stored carefully, this wine will age gracefully for at least 10 years.

Led by winemaker Tom Carson, their philosophy is to craft wines that speak of site and season. It’s the attention and care in the vineyard that is most critical to allowing this expression. Careful site selection and an unyielding pursuit of quality have quickly elevated Yabby Lake into an upper echelon of producers in the region. Their vision and dedication has lead to some exciting accolades in recent years, including the history-making Block 1 Pinot Noir - the first pinot noir ever to win the revered Jimmy Watson Trophy, after 52 years of the award. The Yabby Lake is located in the Moorooduc sub-region of Victoria’s Mornington Peninsula wine growing region. The first vineyards were planted at Red Hill. Yabby Lake produces premium wines with a focus on Chardonnay and Pinot Noir. The wines have a nod in the direction of the wines of Burgundy in France, but do still show unashamed bright Australian fruit flavours and textures. A Shiraz and Pinot Gris is also produced. Yabby Lake is the core brand but there is an association with Heathcote Estate from Heathcote, and the Red Claw and Cooralook wine ranges. A state of the art winery employs modern technique to carefully sort selected fruit. Though high technology comes into play, a reverence for old world wine making allows the fruit to express itself in more natural terms. Minimal intervention and winemaking artifice are secondary to quality fruit.
