  • Growing up on his family's sheep farm, GrandVewe, Ryan Hartshorn was saddened by the immense volumes of whey that were being discarded during the cheesemaking process. So he set himself a challenge: find a way to convert the complex sugars found in the whey proteins into simple sugars that could be fermented into alcohol. It took him two years, and a lot of trial and error, but he got there. And the results are incredible.

    This is the 'sister-spirit' to Ryan's world beating Vodka. Starting with the same base spirit that he cleverly makes from sheep whey, he then adds the botanicals through vapour infusion - a technique not often used in Australian Gins. Vapour infusion (as opposed to steeping) gives the Gin a much more delicate and subtle bouquet. Ryan's Gin is designed to smell beautiful, with delicate petal and citrus aromas and a hint of freshly cut hay. Like his vodka, the creaminess on the palate has to be tasted to be believed.

  • WINEMAKER'S NOTES

    'Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). I am using 6 Native Australian botanicals with 3 of them never used before in any other Gin.'
