  • Maidenii is the result of a collaboration between French winemaker, Gilles Lapalus, and Melbourne-based mixologist, Shaun Byrne. Based out of the Sutton Grange Winery, where Gilles is the winemaker, the duo have created a stunning range of boutique vermouths using both imported and native botanicals. The base wine used for each vermouth is sourced from Victorian vineyards, along with many of the native botanicals, including the vitally important wormwood.

    Maidenii Classic is made from a base wine of Shiraz from Central Victoria, with plenty of aromatic botanicals including orange zest, bay leaf, strawberry gum and gentian root, to name just a few. A beautiful semi-dry, digestif-style vermouth, that can be served simply over ice with an orange slice as a garnish, or made into a longer drink with a splash of soda.

    Deep copper-hued with a smoky spice mixed with citrus and dried herbs. There's a lifted aromatic note of strawberry, with clove and vanilla/toffee characters. The palate is rich and sensual, gently warming, medicinal, with layers and layers of spice and flavour.

    Classic is red in colour with a much warmer spice range. It has loads more orange-peel flavour, again, cinnamon before cardamom and a sweet, almost strawberry, smell. It has a fuller mouth feel owing to more sugar, rich exotic elixir with a note of toffee. I also want this just on ice- maybe with some ginger beer thrown in.'
