The non-vintage Santa Digna Estelado Rose is a sparkling non-vintage rose made from 100% Pais that spends six months on its lees. It has a light rosewater and peach scented bouquet, while the palate is sweet, commercially minded and clean. This is a simple sparkling rose for the masses. Drink now. Sadly, too many of Torres’s Chilean wines did not make the grade. Why? From (1) a noticeable incidence of TCA, (2) too many “mean and green” wines and (3) the sense of them being manufactured and lacking a sense of natural composure, disappointment was paramount. Wheaty and yeasty on the nose, this becomes clearer and more focused on the palate and finish. The mouthfeel is round and solid, while the flavor profile folds in a maderized tone, with cherry and raspberry notes and mild bitterness.

The NV Santa Digna Estelado Rose is the first sparkling wine produced with Pais grapes, the first vinifera grape to arrive in Chile. It is bright pink-colored, with a clean, fresh, fruit-driven nose with bare hints of yeasts. The palate is fresh, with medium-sized bubbles, not terribly complex, but clean and easy to drink with some shy red fruit notes toward the finish. This is a non-vintage wine, so impossible to differentiate from previous (or future releases). Fresh and a good value. Drink now. The Spanish Miguel Torres is one of the pioneers of quality wine in Chile. The big news these days is that they are producing a delicious red with Carinena, a grape that originated very close to their home in Spain, and not one, but two wines with the maligned Pais, a sparkling rose and a delicious Reserva de Pueblo.
