Toro Albalá's Fino En Rama hails from the chalky vineyards of the Moriles Alto district, considered the area's finest quality zone. It's a fino that differs from its Jerez counterparts on two counts: firstly it is made from 100% Pedro Ximénez and secondly it is not fortified (as the grapes get naturally ripe enough). The average age of the bottled wine is around five years and it's a deliciously tangy, salty, oyster-shell noted wine that disappears as quickly as it is poured. A remarkable bargain. The bottle's pretty cool too.

Freshness, vitality, sea spray, nuts, grapefruit, bitter lemon in bouquet. Saline tang dominates the palate, but there is a lovely, vinous, fine citrusy feel here too, so different from other sherry and so much more accessible. Good length, unreal freshness, crisp, saline finish. Utterly wonderful stuff.
