  • Poor Tom's is the brainchild of Griffin Blumer and Jesse Kennedy - two mates who began distilling on their kitchen bench, using vodka and juniper. They decided to get serious about it, poured their savings into a 200L copper still from Germany, and teamed up with master distiller Marcel Thompson - Poor Tom's was born. Hand crafted and distilled in small batches in Marrickville, this is truly Sydney's own gin.

  • WINEMAKER'S NOTES

    Poor Toms steep ten botanicals in Australian wheat spirit, which is then single-shot distilled in a 200-litre Müller copper still.

    Botanicals: juniper, coriander seed, angelica root, cinnamon bark and cardamom, cubeb pepper, strawberry gum leaf, freshly pressed granny smith apples, lemon myrtle and dried chamomile.

    TASTING NOTES

    You'll notice a classic, dry juniper backbone complimented by fresh, zesty, green apple (used here instead of the more classic lemon), native strawberry gum leaf, and aromatic notes of chamomile. Australian lemon myrtle adds a refreshing and fruity citrus note. The finish is grassy, bright and fresh, infused with peppery sweetness.

    Crafted with an eye on refreshment and drinkability, Sydney Dry is perfectly showcased in a strong G&T, a gin and soda, or a dry Martini. Blumer recommends you go strong, with a very dry tonic, a fresh strawberry and lots of ice to bring out the red fruit flavours.
