    The most coveted trophy winning wine in Australia for 2019 has arrived, in the form of Xanadu's all conquering 2016 Cabernet.

    The trouble is, like all these wines that pass into the collective wine buying consciousness of the public, is the demand always outstrips supply. Prices skyrocket, and the only way to secure a bottle or two, is through the secondary market. That's why we wanted to put this case together, featuring three bottles of both the latest 2015 vintage, and of course the hotly requested Jimmy winner itself, the 2016.

    To make sure you didn't miss out, and to also keep the prices reasonable and fair, we are offering this mixed collection for $33.16 a bottle, a happy medium price between the two vintages.

    The best bit about buying this case, you get a chance to compare the breathtaking elegance of the 2015 vintage, with the structure and underlying power of the 2016. According to Darren Rathbone, group CEO for Xanadu, it is the 2015 that is the better drink-now proposition, and could feasibly be the better wine in the long-run. Don't believe him?   • 2016 Xanadu Cabernet SauvignonVarietals - 92% Cabernet, 5% Malbec, 3% Petit Verdot Alcohol - 14.0%57% of the blend was estate grown on our Boodjidup and Stevens Road vineyards in the Wallcliffe sub-region of Margaret River. The remainder was predominantly sourced from established Margaret River Grower vineyards in Wallcliffe (18%), Wilyabrup (13%), and Treeton (5%) and supplemented with small parcel of fruit from and from Geographe (7%).Fruit was crushed/destemmed before predominantly small batch fermentation in a combination of static and open fermenters. Fermentation takes 7-8 days @ 24 – 26°C, during which the cap is managed using a combination of aerative pumping over as well as regular plunging by hand. After fermentation about a quarter of the components experienced a period of extended maceration, being left on skins for 4 weeks before a very gentle pressing. MLF takes place in a combination of tank and barrel. The wine was matured for 12 months in French oak (40% new barriques) before the blend was assembled. 2015 Xanadu Cabernet Sauvignon Varietal Blend - Cabernet Sauvignon (88%), Petit Verdot (7%), Malbec (5%) Almost half of blend was Estate grown in the Wallcliffe sub-region of Margaret River. The remainder was predominantly sourced from two vineyards, in the more northern Margaret River subregions of Wilyabrup and Treeton. A small portion (9%) of Cabernet selected from a mature Geographe vineyard complemented the final blend. Fruit was crushed/destemmed before predominantly small batch fermentation in a combination of static and open fermenters. Fermentation takes 7-8 days @ 24 – 26áµ’ C, during which the cap is managed using a combination of aerative pumping over as well as regular plunging by hand. After fermentation about a third of the components experienced a period of extended maceration, being left on skins for 4 weeks before a very gentle pressing. MLF takes place in a combination of tank and barrel. The wine was matured for 14 months in French oak (40% new barriques) before the blend was assembled and bottled. Alcohol - 13.5%

    WHAT SHOULD YOU EXPECT?


    2016 Xanadu Cabernet Sauvignon Deep red with purple hues. The wine offers vibrant, characteristic aromas of blackcurrants, mulberries and Satsuma plums, with lovely floral elements and hints of mocha chocolate, cinnamon and spice. Full-bodied yet refined, the lively palate offers a core of inky forest fruits, boysenberries and blackcurrant pastilles framed by understated cedar/spicy oak. The wine has a wonderful density, is well structured and layered with plump, jubey fruits, ripe tannins and a lingering Cabernet finish. Cellaring Potential - Vibrant and robust in its youth, this is a wine which will certainly benefit from further bottle maturation and will cellar comfortably for 10+ years. 2015 Xanadu Cabernet Sauvignon Deep red with ruby hues. The wine exhibits vibrant, characteristic aromas of cassis, mulberries, and black plums entwined with hints of cinnamon, nori, and potpourri. Full-bodied yet refined, the generous palate offers a core of inky berry fruits; boysenberry, blackcurrants and Satsuma plums. Dense and well-structured, the palate is layered with these dark fleshy fruit characteristics and ripe tannins which culminate through to a persistent Cabernet finish.
