The 516º Barossa Valley Shiraz is sourced from a gnarly old (70 yrs) dry-grown vineyard at Ebenezer in the Barossa Valley that has been tended by the Schulz family for 6 generations. Marcus Schulz is the current custodian and knows every vine by name.
The fruit from Block 16 is highly sought after, and when we say highly, we mean by the iconic vineyards in Australia's top echelon located in the Barossa. Iconic wines that you will know by name, even if you've never had the chance to try them.
It’s 100% hand-pruned, hand-picked & hand-made, with a little bit of extended skin contact, basket pressed into new & seasoned French oak (20% new) with barrel selection ensuring only the best of the batch is bottled….
Pretty simple really - good fruit makes good wine! And good wine should be the only wine in your glass.

Tasting Notes
This Shiraz is an intensely flavoured, rich wine, inky black to purple in colour. It displays dark berry fruit flavours, and has the texture and structure that will reward extended cellaring.
Winemakers Note
Our approach here follows the philosophy for handmade winemaking employed across all of our wines. Specifically for this Shiraz: cold-soaking and hand-plunging in open fermenters, and cool-fermentation between 18ºC and 24ºC, to preserve fruit flavours and characteristics; wild fermentation and extended maceration, for greater complexity; and maturation in a combination of new and old French oak, before blending via barrel-selection for optimal flavour and texture in accordance with our own house style.
