The story begins in the 14th century when an ingenious Tuscan winemaker discovered that reserving a portion of grapes to dry in the sun before adding them to the fermenting wine enhanced fermentation and enriched the wine's flavour.

This method, known as the governo technique, enjoyed popularity for centuries. However, recent climate changes have made grape ripening less challenging, rendering the costly and intricate governo winemaking method less common, with its practices adapted by Veneto producers in the north to boost flavour. Now, winemakers like Andrea Valiani are reviving governo, and this Lotto Unico IGT Governo All’uso Toscano represents the zenith of their efforts.

A harmonious blend of Sangiovese and Merlot, this unique red wine is designed as a nod to the past. It boasts a rich fruitfulness, reminiscent of a Christmas cake in its lushness, blending extraordinary generosity and flavour with an unexpectedly savoury finish.

Full and intense bouquet with a long persistence aroma of spice. Full bodied palate, intense, rich and creamy. Soft tannins and long persistence in the mouth.

Winemakers Note

Manual harvest in the second half of September. The two parts are vinified separately with a soft grapes pressing. After that two weeks of skin maceration in order to extract the color and other polyphenolic substances. 9/12months of aging in French wood.
