The Collective Review
Pepper Tree draws on impressive vineyards in the Coonawarra region to make wines like this. It's exclusive to TWC and shows power, structure, and finesse. Only a handful of rows picked from the famed vineyard in Coonawarra's terra rossa soils made the grade. On the nose, expect cassis, mint, blackberry compote, red iron, garrigue, and mint. At the same time, the palate displays the regal power of fine-boned Cabernet, with a wave of tannins, grippy mouthfeel, and, of course, the interplay of sweet, dark berry fruit and a savoury finish.
Beautifully lifted and inviting, the bouquet shows dark plum, spiced cherry, thyme and toasted almond characters. It's rounded and supple on the palate offering ripe fruit flavours combined with silken texture and fine tannins. Elegant and harmonious with a persistent chalky finish. Read more

Tasting Notes
Selected from the best rows off our small vineyard in the world famous Coonawarra wine region. The renowned quality of Coonawarra is a product of its thin rocky soils and underlying soft crumbly limestone which naturally produces balanced vine canopies and small crops of intensely flavoured fruit. Displaying delicate black and red fruits with lifted spice and floral notes. A finely structured Cabernet that will gain further complexity with cellaring.
Winemakers Note
Harvested, destemmed and chilled on arrival to the winery. The fruit was soaked for three days before inoculating into a static fermenter. Once alcoholic ferment was complete the wine was pressed off skins and put to French oak barriques (25% new) for approximately 15 months before blending and preparation for bottling.
The soils of Coonawarra consist of thin dark brown to dark grey clays interspersed with broken limestone fragments. The shallow soil overlies soft crumbly limestone at depths of as little as 10cm so that the vines effectively grow in limestone rock. The shallow soils restrict vigour & this, coupled with rigorous canopy management, allows us to control berry size and bunch numbers & thus eventual crop load. This control of crop level and berry size gives our winemakers the best possible starting material with which to create premium red wines.
