2021 Allegiance Wines Local Legend Mataro Graciano Shiraz

<p>Deep and dark purple in colour. Aromas of plums, mulberry and violets with hints of anise and chocolate, along with some background oak spice.</p> <p>Has flavours of spiced plums and blackcurrant, the wine is full flavoured and shows fresh dark berry fruit, some cloves and chocolate characters, and a lingering finish.</p>

61.1% Mataro; 17.3% Graciano; 17.3% Shiraz; 4.3% Carignan Mataro: Hand picked on 11th March 21 at 14.0 Baume. Fermented on skins in open fermenter for a period of 6 days with gentle pumpovers twice per day. Pressed and filled to a mixture of 1, 2 and 3 year old 500L French Puncheons and 300L French Hogsheads. Graciano: Hand picked on 16th March 21 at 13.7 Baume. Fermented on skins in open fermenter for a period of 12 days wit h gentle pumpovers twice per day, until wine was sugar dry. Pressed and filled to a mixture of 2 and 3 year old 300L French Hogsheads. Shiraz: Hand picked on 22nd February 21 at 14.2 Baume. Fermented on skins in open fermenter for a period of 9 days with gentle pumpovers twice per day, until wine was sugar dry. Pressed and filled to a mixture of 2 and 3 year old 300L French Hogsheads. Blending: finalised just prior to bottling in early November 2021
