2021 Venon & Fils L'expression Chablis

Light colour with golden reflections. The nose is flattering, fruity and fresh. The mouth is pure, long chiselled on a nice mineral-saline background.

100% of the aging is done in stainless steel vats. Soft pressing using a pneumatic press. Static settling for 24 hours. Alcoholic fermentation over the maximum length by controlling a temperature around 18 degrees. Malolactic fermentation is then triggered after cooling and resting the wine by heating again at 18 degrees for an indefinite period, a few weeks to a few months. After racking and selection of the fine lees, aging continues for a few months in stainless steel vats. Finally, the filtration and bottling operations are carried out at the estate. All these vinification phases are carried out with great rigour and require regular monitoring with regard to the evolution of the wine. A strict vinification allows me to get all the subtlety of the terroir in the delicacy of the varietal aromas of our Chardonnay grape variety.
